So it's been about 2 weeks since I took meat out of my diet. I ran into my first grade teacher at HEB and her 15 year old daughter the other day and found out the daughter, Molly, was also a vegetarian. Mrs. D was asking, "how do you feed a family on that diet? what do you cook?" so I gave her some suggestions - beans, meaty nuts, avocadoes, boca burgers, etc, and Molly doesn't like beans or veggie burgers. Wow, that must be hard to cook for! It's easier to be vegetarian on your own dime, but I couldn't imagine feeding children, all with differing diets. You go, Mrs. D!
It's been going well. I notice a difference in the way my body feels. It feels cleaner, like I'm running on pure energy, not knock-off energy. It's the difference between good gas and bad gas for your car.
I made the mistake of not telling my wonderful MIL about my new diet before visiting her last weekend and her menu had steaks and roast, some of my faves. I went ahead and had some steak (maybe 2oz.) and ate a lot of the veggies she cooked. It wasn't hard at all, and she made so many delicious vegetables. So I went ahead and told her.
Is this a life change? I don't know. I'm doing it now, and we'll see how far it goes. :)
